Wild Salmon with Indasian Citrus

Serves four

Ingredients:
4 large pieces wild-caught Sockeye Pacific Salmon
2 cans organic coconut milk
zest and juice 2 organic limes
zest and section 4 tangelos
zest and section 4 blood oranges
1 Tbsp. finely minced lemon grass
½ cup macadamia nut oil (or similar oil)
¼ cup annato seed
1 bunch fresh organic cilantro

1 Tbsp. Nuoc Mam Cham Sauce (Below)

For Nuoc Mam Cham Sauce
4 Tbsp. organic sugar
¼ cup water
½ cup rice vinegar

Bring to a boil and remove from heat, stirring to dissolve the sugar.
When cool add:
4 Tbsp. fresh organic lemon or lime juice
¼ cup fish sauce
2 small garlic cloves crushed
1 small chili pepper seeded and minced

Preheat oven to 400°F. Roughly chop the lettuce greens. Place in sink filled with water and toss together to allow any sand or dirt to fall to the bottom. Spin lettuces in a salad spinner and reserve in a large stainless steel bowl.

Method:
In a shallow pan, combine coconut milk, lime juice and lemon grass.
Poach salmon in milk mixture for approximately 15-20 minutes on low heat.

While fish is poaching, in a small saucepan add oil, annatto seed and rough chopped cilantro, stems removed. Simmer for 7 minutes on low heat stirring occasionally. Set aside and allow to cool. Strain mixture and add Nuoc Mam Cham Sauce.

To Plate:
Combine all citrus zest and set aside for garnish. Arrange orange sections on plate.
Place poached salmon in center of plate
(NOW sprinkle fish with large pinch sea salt)
Strain coconut milk mixture and spoon over salmon.
Drizzle with the Asian Achiote mixture and top with zest for garnish.
